Salads filled with leafy greens are a great base for a side salad or the foundation of a healthy entree, depending on what is added to it! They also add volume to your meal without a lot of calories, but most importantly add fiber and disease fighting, immune boosting anti-oxidants. Switching up a few ingredients can change your traditional salad to one with exciting new flavors and textures. Enjoy!
Veggie Mix-Up Salad adapted from www.whfoods.org
Prep and Cook Time: 10 minutes
ingredients
- 4 cups mixed salad greens (try 2 cups of Arugula mixed in)
- 2 oz low-fat cheddar cheese (or goat cheese)
- 1/2 cup cucumber slices
- 1/2 cup tomato, diced
- 1/2 cup sliced red bell pepper
- 1/4 cup avocado, diced
- 1 cup garbanzo beans
- 1/2 cup crimini mushrooms
- 3 TBS sunflower seeds
dressing
- 1 TBS extra virgin olive oil
- 1 tsp lemon juice
- salt and pepper to taste
- for a little extra citrus flavor, use 2 Tbsp fresh squeezed orange
directions
Combine all ingredients. Toss with olive oil and lemon juice. Add salt and pepper to taste.
