I was just reminded of one of my favorite salads from the past – strawberry spinach salad with poppy seed dressing. This has been a favorite of mine for years. It’s simple, light and tasty, and filled with fiber and nutrients – including Vitamin’s C, A and K. You can add avocado for an extra boost of healthy fat and pair with a lean protein of your choice to make it a meal. Enjoy!
Strawberry Spinach Salad with Poppy Seed Dressing adapted from www.gimmesomeoven.com
yields: 2-4 servings
- 6 cups fresh baby spinach
- 1 pint strawberries, hulled and sliced
- 4 ounces crumbled gorgonzola or feta cheese
- 1/4 cup sliced almonds or pecans, toasted
- half a small red onion, thinly sliced
Poppyseed Dressing Ingredients:
- 1/2 cup avocado or olive oil
- 3 Tablespoons apple cider vinegar
- 2 Tbsp. honey
- 1 Tbsp. poppy seeds
- pinch of ground dry mustard (optional)
- salt and pepper to taste (optional)
Directions:
To make the salad:
Toss all ingredients together!
To make the dressing:
Whisk all of the ingredients until combined, serve on the side. Drizzle over salad for desired taste.
