I love participating in the Spartan races. For me, it makes running even more fun by adding an obstacle course along the route of a trail run. It’s a great way to stay fit, laugh and have fun. Today’s snack idea comes from Spartan inspired “FOD” – Food of the Day. This recipe includes avocados that are high in healthy mono-unsaturated fats, as well as Vit K, potassium, folate and fiber. Bananas add another boost of potassium and fiber into the recipe, while offering some quality carbohydrates. Make this your own recipe and enjoy!
CURRIED AVOCADO BANANA WRAP adapted from Andrew Thomas

Ingredients:
- 1 avocado
- 1 banana
- 3-6 large leaves romaine lettuce
- 1 teaspoon curry powder
optional: make it into a small meal or large snack by adding tempeh, grilled chicken or lean ground turkey and cooked quinoa.
Directions
- Remove skin and pit from avocado, then scoop into bowl.
- Peel banana and drop into bowl with avocado.
- Mash avocado and banana together with a fork.
- Mix in curry powder.
- Scoop mixture onto 3 romaine lettuce leaves.
- Eat like a tortilla wrap
