One of the many great things about my Mom is that she can pull together any ingredient available in your kitchen and make it taste great. This pasta salad was one of those creations that was both delicious and quick. Enjoy!
INGREDIENTS:
1, 16 oz package Brown Rice Spiral Pasta (or whole wheat pasta)
Fresh Arugula
1, 14 oz can Organic Garbanzo Beans (aka chick peas)
1/4 – 1/2 C crumbled Gorgonzola or Feta Cheese
Olive Oil
Sea Salt
DIRECTIONS:
1. Cook pasta as package dictates.
2. In a bowl of drained pasta, add and mix Garbanzo beans, fresh arugula (amount up to you), cheese, drizzle/lightly coat with olive oil and add a dash of sea salt.
This is great as a side dish, offering fiber, antioxidants and healthy fat. To boost the protein try serving with grilled chicken, shrimp or portobello mushroom skewers.
