With minimal but rich ingredients, this tasty side dish is perfect for a fall recipe. Carrots are rich in Vitamin’s A, E , C and K, as well as B vitamins, manganese and potassium. Carrots are full of fiber and antioxidants to help keep you healthy from the inside out. Cardamom has a spicy and citrusy flavor, and also promotes digestive and overall health. Perhaps this can be a new recipe at the Thanksgiving table this year!
ROASTED CARROTS WITH CARDAMOM BUTTER adapted from www.eatingwell.com
active time: 15 minutes; total time: 40 minutes; serves: 4
ingredients
4 teaspoons butter, melted
2 teaspoons canola oil (or oil of choice)
1 teaspoon ground cardamom
1/2 teaspoon salt
2 pounds carrots, peeled and cut diagonally into 1/4-inch-thick slices
directions
1. Position rack in lower third of oven; preheat to 450°F.
2. Combine butter, oil, cardamom and salt in a medium bowl. Add carrots and toss well to coat. Spread evenly on a rimmed baking sheet. Roast the carrots, stirring twice, until tender and golden, about 30 minutes. Serve immediately.
