February is a month focused on heart health and love! Valentine’s day for those celebrating with a special someone, family or friends is not only a reminder to to express gratitude and love, but also a time when that is expressed through chocolate, desserts and, often, multi-course meals. Maybe it’s a treat day as part of your fueling plan, or maybe you are looking for some healthy alternatives to add to that special meal. This recipe can be that great addition! It still has some common and traditional “dessert” ingredients, but is a light option overall. With love and gratitude!
Mini Raspberry Mousse Parfait adapted from www.tasteofhome.com
ingredients
- 1-3/4 cups fresh or frozen unsweetened organic raspberries, thawed
- 3 tablespoons raw sugar
- 2 teaspoons cornstarch
- 2 teaspoons fresh orange juice
- 1-1/3 cups whipped topping or dairy free alternative
- 12 cubes angel food cake (1/2-inch cubes)
directions
1. Press raspberries through a strainer and discard seeds and pulp. In a small saucepan, combine sugar and cornstarch; stir in raspberry juice. Bring to a boil; cook and stir for 2 minutes or until thickened. Refrigerate until chilled.
2. Divide raspberry mixture in half. Stir orange juice into one portion; set aside. Place remaining mixture in a small bowl; fold in whipped topping.
3. Divide angel food cake among four small dessert dishes. Layer each with a scant tablespoon of reserved raspberry-orange mixture and 1/3 cup creamy mixture. Refrigerate until serving.
