My Aunt passed this recipe on to me and it fits perfectly as a quick snack to grab on the go and a pre-workout energy booster. Simple, clean ingredients that can still satisfy your sweet tooth. This recipe also includes hemp seeds that are full of easily digestible proteins, containing all of the essential amino acids, high in fiber, rich in minerals and are a boost of healthy Omega-3 fatty acids. Fuel can be functional and tasty!
Pecan Coconut Balls adapted from www.draxe.com
ingredients
- 1 cup pitted medjool dates
- 1 1/2 cups pecans
- 1/2 cup unsweetened coconut flakes
- 3 Tbsp hemp seeds
- 1/2 tsp Vanilla Extract
directions
- Process pecans in food processor until ground. Add dates and process until mixture is sticky.
- Add hemp seeds and coconut. Process until blended.
- Roll into 1″ balls and refrigerate until firm, approximately one hour.
