As you prepare to celebrate this Independence Day, take a moment to plan how it can be fun, creative, healthy and safe! This recipe gets creative and uses in-season berries for a healthy dessert option to bring to your next BBQ. Greek yogurt is high in protein, which helps to keep you satiated (replaces the usual whipped cream), while the colorful berries are a big antioxidant boost and and add a sweet taste. Serve in small mason jars for individuals or serve it up in a big glass bowl. Enjoy while having a healthy and happy 4th of July!
PATRIOTIC PARFAIT adapted from www.greatist.com
serves 6
ingredients
2 cups raspberries (or strawberries)
2 cups pitted cherries, sliced
2 cups blueberries
2 teaspoons fresh lemon juice
6 cups plain Greek yogurt
1 tsp vanilla extract
1 tablespoon lemon zest
directions
- In a small bowl, mix together raspberries, cherries, and blueberries with 2 teaspoons of lemon juice. Set aside
- In another bowl, mix yogurt, vanilla, and lemon zest.
- In 6 small glasses (or mason jars for easy transport!) layer ½ cup fruit mixture, followed by ½ cup yogurt, ½ cup fruit, and another ½ cup yogurt. Top with a sprig of mint, a few blueberries and strawberries and design like a flag… or lemon zest.
