I love salsa. I have enjoyed almost every variety offered to me! Salsa is a great addition to soups, salads, sandwiches, wraps, grains and a healthy “dip” option. Salsa typically adds color to your dish, and provides nutrition and flavor without much calorie consequence. This kiwi salsa, although higher in calories than most salsa, is a healthy fat and fruit combo, that also has a kick with the jalapeños. Kiwi’s are high in Vitamin C and potassium, while avocado offers over 25 essential nutrients, and healthy monounsaturated fat. What can you try Kiwi Salsa with this week? I think I will try it with grilled fish tacos!
KIWI SALSA
ingredients
3-4 ripe kiwi, peeled and chopped
1/4 cup pomegranate seeds
1/2 avocado, peeled and chopped
1 heaping tablespoon, thinly sliced green onion
1 tablespoon of chopped jalapeño chili peppers (no seeds)
1 tablespoon chopped fresh cilantro
1 teaspoon olive oil
salt and pepper to taste
directions
Place the kiwi, pomegranate seeds, avocado, green onion and olive oil in a medium-sized bowl. Starting with just a teaspoon of chopped jalapeño, gently fold in and add more to your desired level of taste. Add cilantro. Add salt and pepper to taste.
Makes about 1.5 cups.
