One of the great things about food is that it can be shared! In many cultures and among many families – meals, recipes and nourishment are traditions that are passed through from one generation to the next. When cooking a family recipe, I am often brought back to fond memories of childhood and family dinners. Below is one my Dad’s favorite recipes. It’s chock full of good nutrients, is quick to make and delicious! Enjoy a boost in your antioxidants and fiber 🙂
GREENS & BEANS
INGREDIENTS:
Head of escarole cleaned and chopped
Garlic cloves (amount needed per your taste)
Onion- chopped
Can of diced tomatoes
Can of cannelllini
Broth (canned veggie or chicken broth)
Olive oil
DIRECTIONS:
In a deep dish frying pan at medium temp:
1. Mince garlic cloves
2. Dice onions-sautee until soft in oil
3. Add escararole to wilt with small amount of broth
4. Add tomatoes, cannellini
If serving as soup, add broth to desired consistency. Mix in grated parmesan cheese to taste.
