Many of us know that avocado is considered a healthy fruit, rich in vitamins and even good fat. Recent studies out of Ohio State University have shown more detail and promise on why avocados should be included in a healthy fueling plan. As an example, eating avocado with tomatoes or carrots significantly increased absorption of beta-carotene 2.4 times and 6.6 times respectively compared to eating tomatoes or carrots without avocado. This recipe is great for a snack at home or as a starter for the remaining summer barbecues. Enjoy!
CORN AND BEAN STUFFED AVOCADO adapted from www.avocadocentral.com

ingredients

2/3 cup organic black beans, rinsed and drained

1/2 cup organic corn, drained

1/2 cup organic shredded carrots

1/4 cup chopped fresh cilantro leaves

1/2 cup prepared chunky salsa (homemade or your favorite brand)

2 green onions, thinly sliced
- black pepper and sea salt (optional)

2 ripe, Large Avocados, cut in half and seeded
- 4 small bunches of radish or alfalfa sprouts
- 1/2 fresh lemon or lime
- 1 tbsp extra virgin olive oil
- In a bowl, combine beans, corn, carrots, cilantro, salsa, green onion, pepper/salt (to taste), olive oil and lemon or lime.
- Fill each avocado shell with 1/4 of bean mixture.
- Garnish with sprouts and serve.
