I have been enjoying picking up fresh fish from the local vendors at the Farmer’s Market each week. The meals early in the week ahead are made of fun and creative recipes based around the fish of the week and vegetables that pair well from the market. This week’s recipe highlights cod, which is a great source of protein, vitamin B-12 and omega-3 fatty acids. It is mild in flavor and works well with a variety of herbs and spices. Enjoy!
