It seems as if I am on a kick sharing recipes for side salads. Maybe it’s the heat we are experiencing on the west coast or just the fact that I love colorful, light salads that taste great, are simple and nourishing. I like the crunch and little boost of healthy fats that the seeds add, while the grapes and broccoli offer fiber, vitamins, minerals and antioxidants. This will be good for a BBQ side dish. Enjoy!
BROCCOLI AND GRAPE SALAD adapted from Food and Wine Magazine
ingredients
Dressing:
3/4 cup plain yogurt
1 1/2 tablespoons apple cider vinegar
1 tablespoon honey or agave mustard
1 tablespoon whole grain mustard
Sea salt and ground black pepper, to taste
Salad:
1 head broccoli, cut into florets
1 cup seedless red grapes
1 1/2 tablespoons pumpkin seeds
1 1/2 tablespoons sunflower seeds
directions
1. To make the dressing, combine all ingredients and set aside.
2. For the salad, thinly slice broccoli florets and arrange on 4 plates or a large platter.
3. Cut half of the grapes in half, and then divide among the plates, or scatter on top of the platter.
4. Sprinkle the salad with seeds, and then drizzle with the dressing.
