Beets are a root vegetable that have many health benefits. It promotes cardiovascular health, aids in the tolerance to high-intensity exercise, and helps fight infections. Below is a great simple recipe to include beets into your fueling plan.
Hummus, Beet & Feta Wrap adapted by www.CleanEating.org, Julie O’Hara
Serves: 2, Time: 10 minutes
Ingredients
- 2 tbsp hummus of choice
- 2, 6 in whole grain or gluten free tortillas
- ½ cup beet peeled and julienne cut
- 2 tbsp feta cheese (1/2 oz)
- ½ cup packed arugula, roughly chopped
Directions
- Spread 1 tbsp hummus on each tortilla, leaving a 1 1/2-inch border.
- Sprinkle evenly with beets, feta and arugula.
- To roll up, fold in 2 opposite sides of tortilla and roll, starting with the end closest to you.
- Slice each wrap in half on the diagonal.
If making in advance: Wrap each wrap tightly in foil or parchment paper and refrigerate in an airtight container or zip-top bag. May be made up to 1 day in advance.
