Blueberry picking in the summer brings back childhood memories. Considering how much I love fresh blueberries, I think fondly upon those times and still look forward to enjoying the berries my Mom picks each summer I visit. Most people know that among all of the fruits, blueberries have one of the highest antioxidant capacities, protecting our cells and helping to benefit and protect the nervous system and brain health. They are great as part of a snack or dessert, especially with this cashew sauce adding some healthy and satiating fat to the mix. Enjoy and share!
Blueberries with Cashew Sauce adapted from www.whfoods.com
prep and cook time: ~1 hour
ingredients
- 2 pints fresh blueberries
- 1 cup cashews
- 1/2 cup water
- 1 TBS maple syrup or to taste
- pinch of sea salt
- 1-1/2 tsp almond extract
directions
- Blend all ingredients except blueberries in a blender on high speed until smooth (2-3 minutes).
- Add additional water in small amounts to create desired consistency.
- Divide blueberries into two bowls.
- Pour as much of the sauce as desired over blueberries and chill for 1 hour before serving. Sauce yields about 1 to 1-1/2 cups. (profile is based on using all of the sauce.)
