The Avocado Central website reports that on Super Bowl Sunday, Americans are expected to consume 104.2 million pounds of avocado! Wow. I love avocados, and still, that seems like an astonishing number! If you are planning on being one of those Americans that will enjoy the health boosting benefits of the nutrient dense avocado, include a healthy recipe and plenty of vegetables to go with it!
Antipasto Avocado Skewers adapted from www.avocadocentral.com
ingredients

16 (6-in.) wooden skewers

10 oz. sliced turkey or chicken (original recipe recommends salami)

2 firm-ripe, Fresh Avocados, halved, seeded and peeled

16 grape or cherry tomatoes

1 (8-oz.) package fresh mini mozzarella cheese balls
-
16 pitted Kalamata olives
- Olive oil spray or balsamic vinaigrette dressing mist
- Black pepper

Italian herbs, mix

Cut the turkey, chicken or salami into cubes or wedges about 1-inch wide. There should be enough for one cube per skewer.

Cut each avocado half into 12 chunks.

Thread each skewer with a piece of avocado, followed by one grape tomato, a mozzarella cheese ball, another piece of avocado, one piece of deli meat, an olive, and a final piece of avocado.

Place skewers on a serving tray and mist lightly with the olive oil or balsamic vinaigrette dressing. Pepper to preferred taste and sprinkle with chopped, dry Italian herbs.
Additional info:
*Serve two kabobs crossed on a bed of greens for a presentation and a veggie boost.
*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
