I was more than thrilled with the outcome of this recipe! By no means is it a low-calorie recipe, but it is filled nutritious ingredients that taste great! It can be served as a dessert (which I am going to make for Thanksgiving) or cut into bars to take on the go as a snack. There are many varieties that will work, but I will give you the ingredients I used and you can get creative from there!
Sweet Potato Oatmeal Bars
Cooking Time: 30 – 60 minutes
Servings: 8
Ingredients:
2 cups cooked, mashed sweet potatoes (or canned pumpkin)
1/4 cup honey (or maple syrup, or corn syrup or brown rice syrup)
1 1/2 teaspoons cinnamon, divided
2 cups rolled oats (and/or rolled wheat, barley)
1 cup chopped almonds and hazelnuts (or any mix of nuts like walnuts, pecans)
1 cup peanut flour (or whole wheat pastry flour, or a mixture of flours)
1/4 cup honey (or maple syrup, corn syrup or brown rice syrup)
1/4 cup grapeseed oil (or canola oil, or “light” olive oil, or hazelnut oil)
1/4 cup water
Directions:
1. Preheat oven to 350 degrees.
2. Place sweet potatoes, honey and 1 teaspoon cinnamon in a food processor and mix until smooth. Set aside.
- In a medium bowl, mix oats, nuts, flour and 1/2 teaspoon cinnamon. Set aside.
- Mix honey, oil, and water separately and add to dry mix. Mix together until combined and wet. Divide dough in half.
- Oil an 8×8 baking dish and press half of dough in the bottom. Spread the sweet potato mixture over the dough evenly. Crumble the remaining half of dough evenly over the sweet potato. Press gently. Bake for 20 minutes, until slightly crisp on top and golden.
- Can serve warm or let cool before serving.
