I love utilizing salsa in any way that I can. I use it instead of salad dressing, on sandwiches, in stir-fry, and of course, on tacos! This salsa seems to be a great summer selection, and also a wonderful alternative for people who are sensitive to the nightshade family. Nightshades are a large family of plants grown in the shade of the night. The list includes tomatoes, eggplant, potatoes, peppers, goji berries and more. Although these fruits and veggies can offer many health benefits to most, to people who are sensitive to the different alkaloids the nightshades contain, they can suffer from health problems like muscle stiffness, rashes, insomnia, poor healing, wheezing, acid reflux, arthritis and other inflammatory conditions. Cucumber Radish Salsa

INGREDIENTS
2 medium cucumbers, diced small
1 small daikon radish, diced small (or ⅓ of a large one)
½ small sweet onion, finely diced (about ½ cup)
½ cup chopped cilantro
½ teaspoon sea salt (optional)
1 lime, juiced
DIRECTIONS
Place all ingredients into a medium-sized bowl and toss together. Let the flavors mingle for about an hour before serving if desired.
